Oto krótki opis od palarni Andy: Te ziarna lecą do nas ze stacji myjącej Chelbesa One w rejonie Gedeb w Etiopii. Około 1 000 farmerów dostarcza tu wiśnie, uprawiając kawałki ziemi wielkości 2–3 ha na wysokości 1 950–2 200 m n.p.m. Ta partia to mieszanka lokalnych odmian Korume i Wolisho, czyli prawdziwy etiopski klasyk. Gdy wiśnie trafiają do stacji, lądują najpierw w wodzie, żeby oddzielić „pływaki”, czyli wszystkie niedojrzałe wiśnie, które zostały zebrane od tych czerwoniutkich i dojrzałych. Potem wiśnie trafiają do depulpera i zostawiane są do fermentacji w zbiornikach na 2–3 dni, zanim zostaną umyte i rozłożone do suszenia na podwyższonych łóżkach. Aby wyschły równomiernie, codziennie są grabione, a całość trwa to od 7 do 10 dni, w zależności od pogody, aż osiągną idealną wilgotność. Czyli krótko mówiąc: tu każda wiśnia przechodzi prawdziwe SPA – od kąpieli, przez fermentację, po codzienny masaż na łóżku do suszenia!
Here comes a quick note from the roastery, Andy:
These beans come to us from the Chelbesa One washing station in the Gedeb region of Ethiopia. Around 1,000 farmers deliver cherries here, each working 2–3 hectares of land at 1,950–2,200 meters above sea level. This lot is a mix of local Ethiopian heirloom varieties Korume and Wolisho — a true Ethiopian classic. When the cherries arrive at the station, they first take a little dip in water to separate the “floaters”—all the unripe cherries that got picked alongside the perfectly red ones. Then they go through the depulper and ferment in tanks for 2–3 days before being washed and spread out to dry on raised beds. To make sure they dry evenly, the cherries are raked every day, which takes 7–10 days depending on the weather, until they reach the perfect moisture. In short: every cherry here gets the full SPA treatment — from a bath, through fermentation, to a daily massage on the drying beds!
